Ingredients:
1 pound large shrimp
6 ounces campari or roma tomatoes, chopped
2 Tbs. olive oil
1 Tbs. The Real Dill Lemon Pepper
1 Tbs. Edisto Bay Seasoning
1 Tbs. Greek Mediterranean Seasoning
1/4 cup white wine
2 Tbs. unsalted butter
4 ounces mozzarella cheese chopped
Fresh basil, chopped (optional garnish)
Recipe:
- Preheat the oven broiler with the rack about 6 inches from the heat source.
- On the stove top, heat olive oil in an oven-safe pan over medium high heat. Add shrimp and tomatoes to pan and cook on the stove top medium high until shrimp are just pink (3-4 minutes).
- Toss with all 3 seasonings
- Add butter and wine to pan, and simmer for an additional 2-3 minutes.
- Remove pan from heat. Top with mozzarella, and broil until cheese is melted and starting to brown (2-3 minutes).
- Sprinkle with grated Parmesan and fresh basil (if desired) serve as is or over your favorite pasta.
